To celebrate Earth Day (tomorrow) we made Earth Day Bars. Made with good things...oats (Collin thought we were making something with weeds, since he saw a picture of weeds on the oatmeal container!), dark chocolate chips (healthy for our hearts), peanuts. CeCe had a great time chopping the nuts.
We also made Pink Yink Drink. Pureed blueberries with a touch of Organic Agave Nectar--pour in the bottom of the glass and top slowly with a blended mix of strawberries, milk and Agave syrup (or honey, but the honey was low and we didn't want to wait for it to make it's way to the top of the bottle). Agave Nectar is great to use as a sweetener. It's all natural, has strong sweetening properties and a low glycemic index (which means it is slowly absorbed by the body and doesn't cause the same spike in blood sugar as regular sugar). I use it for everything!
We read Shel Silverstein's "The Giving Tree", great story about making friends with trees :) Still kind of brings a tear to my eye.

Waffle Butterflies
We made beautiful Waffle Butterflies today, and read "How Do Dinosaurs Eat Their Food?" You can tell by the last picture that I really got into the book :) I look as scary as a dinosaur!

New Website!
I just found the coolest website. I am always looking for new coloring pages and activity sheets for class. I seem to find the same ones, same coloring sheets for every theme. I just found an awesome website that has a bunch of activities for each theme. Writing, word search, coloring...a fun butterfly placement for tomorrow's class. http://www.colormountain.com/

Someone is going to have to volunteer to take pictures with my camera! I get so involved with the class that I forget to take pics. We had such cute recipes yesterday. Shamrock Toasties (english muffin half, cheese, slice of green pepper that looks like a shamrock, broiled). And Shamrock Punch--a lovely shade of green!

Rainbow Cupcakes
I started a new cooking class session today. I was so excited--I have all new children except one, who has been in my class for a few sessions. The other children were in my community center class, but have never done classes at my house. They are all great kids, a joy to teach, and they all have cool moms (and one Grandma) as well. The youngest is almost 2 1/2, and the oldest ones are four. We made Rainbow Cupcakes. They didn't exactly turn out like rainbows (they were supposed to have stripes like a rainbow). We didn't have the time to make sure all the layers were covered completely by the next color. But they were pretty. Forgot to take pictures of the ones the kids made. These were the ones I made with the leftover batter. We read "If You Give a Cat a Cupcake" while waiting for them to bake.
